Dinner Monday Night

I made a lemon marinade for a couple of blocks of tofu and served some white beans to go along with it. 

  • 2 blocks firm or extra-firm tofu, well pressed
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1 tsp basil
  • 1 tsp thyme
  • salt and pepper to taste
I drained the beans and cooked them in this extra marinade.  It was quite delicious.
