Refried Bean Soup. Dinner Tonight!

I have Cassius for the weekend, and when that happens two things happen, I eat poorly and I miss my exercise goals.  Like clockwork, it happens every time, I swear I'm not gonna eat any pizza, or candy or junk food, and it happens anyways. 

Did I mention that Nintendo of America sent me a gift card to Pizza Hut today? 

Thanks Nintendo! 

Anyways, I needed to eat something good, some vegan, something that would stick to my ribs, and make me feel full. 

I found this recipe from sparkpeople.com  It's for refried bean soup.  The original recipe makes 12 servings, which is what I am presenting to you all on the blog, but I halved it since it is only me and mom eating it. 

    2 large onion, chopped


    4 cloves garlic, minced
    3 cups vegetable broth
    (2) 14-ounce can diced tomatoes (fire-roasted)
    (2) 15 ounces fatfree refried beans
    (2) 15 ounces black beans, cooked
    2 cups frozen corn kernels
    1/2 cup Western Style Vegetables
    2 teaspoon cumin


    3 teaspoon smoked paprika
    1 teaspoon chipotle chili powder
    2 teaspoon hot sauce
    1 teaspoon Mexican oregano
    salt and pepper, to taste
    I removed the hot sauce, the chili powder, and the oregano (used regular in it's place) did not want it to be overly spicy since I have a delicate palate.  It was pretty amazing! 

    I recommend this soup a lot.
