I'm awfully busy with school this week, so I need quick easy to prepare dishes. Tonight's dinner is a lima bean soup.
I love lima beans but I'm not sure how awesome they are gonna be in soup form
Here is the ingredient list
1 Tbsp. olive oil
1 small onion, diced
1 clove garlic, minced
2 cups vegetable broth
1/2 cup water
2 cups frozen lima beans
Salt and pepper, to taste
2 Tbsp. sliced chives
Small list, seems simple enough right?
Here is how to cook it.
• In a large pot, heat the oil over medium heat, add the onion and garlic, and cook until soft.
• Add the broth, water, and lima beans and simmer for 10 to 15 minutes, or until the beans are tender.
• Pour the mixture into a food processor or blender and purée the soup. Add additional water for a thinner consistency.
• Return the soup to the pan, season with salt and pepper, and heat over moderate heat until hot.
• Garnish with the chives and serve.
First thing, I am not going to puree the entire soup, I want to actually have some bite in my soups, and I think leaving some whole beans in there will be neat, and still give us an awesome green color that not really seen in soups outside of a split pea.
There is a part of me that thinks a holy trinity (Carrots, onions and Bell Peppers) would go fantastic in this.
